Right across the street from Lambeau Field sits a space that feels just as much a part of Green Bay as a game day itself.

In this episode of Bay Area Voices, we visited Hinterland Brewery and sat down with Michelle Tressler, co-founder of Hinterland Brewery, to talk about how a small brewing idea turned into one of Green Bay’s most recognizable gathering places.

From Brewery to Gathering Place

Hinterland’s story began in the mid-1990s when Michelle and her husband moved back to Green Bay and founded Green Bay Brewing Company, with Hinterland as their flagship brand. At the time, it was a production-only brewery.

“We would hear knocks on our door all the time,” Michelle shared. “People would ask, ‘Can we come tour? Can we taste the beer?”

That curiosity sparked the idea to create something more. In 1998, Hinterland expanded into a hospitality space built from the ground up, combining a large restaurant and brewery operations under one roof. Today, the space includes a 300-seat restaurant and full brewery operations, located directly across from Lambeau Field.

Built for Green Bay

Over the years, Hinterland has become closely tied to the Green Bay community, including a long-standing relationship with the Packers organization.

“We’ve really felt a part of the community,” Michelle said. “It made a lot of sense for us to build this as a true local brewery and help anchor the area.”

That local support has helped shape Hinterland into a place where visitors and locals gather year-round, not just on game days.

A Beer Program with a Personal Story

Hinterland’s beer lineup has expanded well beyond its early days, now including a wide range of styles, from barrel-aged beers and sours to pilsners and ales.

One of its most meaningful additions is the gluten-free beer line, which now includes five options distributed nationally. The line, including Saving Gracie, is personal for Michelle, whose family has experience with celiac disease.

“We know how serious it can be,” she shared. “People tell us they’re excited to come here and dine with confidence.”

That same care carries into the restaurant, where gluten-free options are handled thoughtfully to minimize cross-contamination.

Wood-Fired Food and Game Day Energy

The food at Hinterland centers on open-fire cooking, featuring wood-fired grills and pizza ovens that give the menu bold flavor. On game days, the atmosphere is electric, with thousands of guests moving through the space efficiently before and after kickoff.

Michelle’s go-to order says it all: an Italian meat pizza paired with a Saving Gracie Sour.
